Description

Outdoor pilaf, braised meat, vegetables, and slow-cooked one-pot meals benefit from cookware that builds up heat and spreads it beyond a small hot spot at the base. This 10 L Tatar-style kazan is made from cast iron and shaped as a broad, relatively low hemisphere. Its rounded walls make it easy to stir ingredients from the bottom upward and to move naturally from searing to gentler simmering.

Shaped for cooking over live heat

The hemispherical bowl is the defining feature of this kazan. Instead of resting like a conventional flat-bottomed pot, it is intended to sit securely in a compatible support. It can be used with a suitable brazier or positioned above a fire on a stable stand or tripod. Matching the support to the rounded base is important for keeping the vessel level while ingredients are being stirred.

  • Capacity: 10 L, providing ample room for a substantial batch and comfortable mixing.
  • Material: cast iron, which takes time to heat but retains its working temperature well.
  • Diameter: 360 mm, a key measurement when selecting the supporting structure.
  • Empty weight: 7.71 kg; the support must also accommodate the weight of the food placed inside.
  • Configuration: a hemispherical Tatar-style kazan supplied with a cast-iron frying-pan lid.

A lid that becomes a cooking surface

The included cast-iron lid has a flat working face and can also serve as a frying pan. When fitted to the kazan, it helps retain heat during the slower stages of cooking. When removed, it provides a separate surface for cooking or reheating food. This dual-purpose arrangement is useful at a campsite, where reducing the number of large cookware pieces makes the cooking setup easier to organise.

Cast iron responds differently from thin cookware. It warms more gradually, then releases stored heat at a slower pace. That suits recipes built around consecutive stages: brown the first ingredients, add vegetables, grain, or liquid, and continue at a calmer heat. The 10 L bowl leaves working space for a long spatula and allows ingredients to be turned through the rounded centre rather than merely pushed across a flat base.

Seasoning and routine care

The kazan should be heated and treated with vegetable oil before its first cooking session. With continued use, oil helps develop a protective layer across the inner cast-iron surface. Preserve that layer by cleaning away food residue with a soft sponge or a non-rigid brush. Hard metal brushes are unsuitable for regular cleaning of the interior because they can strip the established oiled surface.

Dry the vessel thoroughly after cleaning and keep it in a dry storage area. Water or damp food should not be left inside between uses. Careful drying and occasional renewal of a light oil film help keep the cooking surface ready for the next outdoor meal.

Choosing the right support

Before cooking, compare the 360 mm diameter with the opening or seating area of the brazier, stand, or tripod you plan to use. The support needs to hold the rounded bowl securely and carry more than the listed empty weight, since the full load of ingredients must be included. Once properly seated, the kazan offers a practical setup for pilaf, braised dishes, and other meals that rely on controlled heat and unhurried cooking beside the fire.
