Description

This barbecue grate lets you cook meat, fish, seafood, and vegetables directly over charcoal without threading every piece onto a skewer. The version is intended for a brazier sized for 12 skewers and has a width of 30 cm. Its rectangular cooking area spans the top of the firebox, providing room for several portions and allowing ingredients to be arranged over hotter or cooler sections and removed individually as they become ready.

An open cooking surface for a varied barbecue menu

The cooking surface is formed by parallel stainless steel rods held inside a rectangular outer frame. Each rod is 4 mm in diameter, with a spacing of 1.5 cm between adjacent rods. This open layout allows heat and smoke to travel upward while supporting suitably sized portions of meat, fish, vegetables, seafood, and similar foods above the charcoal.

This is a single open grate rather than a hinged basket that clamps food between two panels. Ingredients can therefore be placed in any convenient order, turned separately, and lifted off according to their individual cooking times. The format is useful when preparing a mixed menu: denser pieces can go on first, while delicate vegetables or smaller portions can be added later without disturbing everything else on the grate.

Checking the fit before use

The 12-skewer designation identifies the general brazier format, but the actual firebox should still be measured before choosing the grate. Compare its opening with the confirmed 30 cm grate width, measure the available supporting length, and check that stable ledges are present on both sides. The frame should rest level above the charcoal, should not slip into the firebox, and should remain steady while food is being turned.

Careful measurement is particularly important for custom braziers and models fitted with raised decorative panels, a lid, side shelves, or internal guides. Two fireboxes may have the same number of skewer slots yet differ in their external dimensions and in the way a grate sits on the upper edges. Measurements of the intended support points provide a more dependable fit check than skewer capacity alone.

Cooking and routine care

Place the grate on a stable brazier after the high open flames have subsided and the fuel has formed an even bed of hot charcoal. Leave small gaps between portions so heat can circulate through the cooking surface. Use suitable tongs or a spatula to turn food, wear heat-resistant gloves near the hot metal, and avoid loading the unsupported edges excessively. Never attempt to reposition a hot grate with bare hands.

When cooking is finished, allow the metal to cool naturally. Remove food residue, clean the rods and surrounding frame, and dry the surface thoroughly before storage. Prompt cleaning keeps burned particles from affecting the flavour of a later meal and prevents the open spaces between the rods from becoming obstructed. This grate is a practical way to expand an ordinary charcoal brazier beyond skewered kebabs and prepare dishes that need a broad, open support over the heat.
