Description

A fire-cooking saj with two working positions

The Siton 45 cm cast-iron lid pan is designed for frying and stewing over an open fire. Its broad concave side accommodates meat, fish, vegetables, seafood, and side dishes. A stand is supplied with the pan, so a separate cooking grate is unnecessary: prepare a stable fire area in advance and position the support correctly before lighting the fire.

The rounded shape and convex base allow the pan to work in two orientations. In its normal position, ingredients, oil, and cooking juices remain closer to the centre, which is useful when food is first browned and then cooked more gently. Turn the pan over with the convex side facing upward, and it becomes a surface for lavash, thin flatbreads, and other flat dough products.

Construction and key specifications

  • 45 cm diameter. The large cooking area holds several portions without forcing the ingredients into a tightly packed mound.
  • Cast-iron construction. After gradual preheating, the metal distributes heat across the surface and continues releasing it when the intensity of the fire changes slightly.
  • Pan weight — 5.5 kg. Its mass should be considered when carrying or turning the pan and when choosing a suitable storage place.
  • Stand included. Its legs are 45 cm long; position the stand evenly and check its stability before the fire is lit.
  • Loop handles around the rim. They provide several grip points for moving or turning the pan once it has cooled.

Preparing and using the cast iron

Before the first cooking session, rinse the working surface with warm water, dry it completely, heat it gradually, and apply a thin film of vegetable oil. Add the ingredients only after the surface has warmed evenly. Use oil or cooking fat for frying and adjust the fire early: substantial cast iron responds more slowly to reduced heat than thin steel cookware.

The body, rim, and handles become very hot in use. Suitable heat-resistant gloves and a secure grip are essential for any contact with the heated pan. When changing to the convex side for lavash, turn the pan before lighting the fire or wait until it has cooled fully and the entire cooking area has been cleared.

Cleaning, storage, and fit

Allow the pan to cool naturally after use; do not pour cold water onto hot cast iron. Clean the cooled surface with warm water, wipe it thoroughly, and apply a light coat of vegetable oil. Store the pan completely dry and protect it from persistent moisture. This care routine helps maintain the cooking surface and reduces the likelihood of rust forming between uses.

The term “lid pan” describes the dual-purpose form, but compatibility with a particular cauldron or another vessel cannot be determined from the nominal 45 cm diameter alone. To use it as a lid, compare the actual seating diameter, edge profile, and rim shape separately. As a freestanding saj on the supplied stand, the pan is intended for cooking above a properly prepared fire.
