Description

This 6 L cast iron cauldron is suited to pilaf, shurpa, fish soup, porridge, stews, meat, and vegetables. Ingredients can be browned first, followed by grain, stock, or sauce, before the dish is finished over moderate heat. The lid is useful during the slower cooking stage, while the curved bail handle allows the vessel to hang above a fire from a suitable support. This format works well for garden cooking, country retreats, picnics, and other outdoor meals.

Key specifications

  • Capacity: 6 L.
  • Body material: cast iron.
  • Diameter: 260 mm.
  • Wall thickness: 3.8 mm.
  • Empty weight: 6 kg.
  • Configuration: rounded body, lid, and upper curved bail handle.

A hanging setup must support the complete cooking load, including the food and liquid added to the empty vessel. Its base should stand level and remain stable while the contents are stirred. The cauldron needs enough clearance for the heat to be controlled by changing its distance from the flames or glowing coals, without allowing excessive swinging.

Cooking above a fire

The metal comes up to temperature gradually and transfers accumulated heat through the walls. This behaviour suits recipes with several stages: meat or vegetables may be browned before the remaining ingredients are added and cooked further beneath the lid. Some headroom should be left when filling the vessel, making the contents easier to stir and helping the cook manage simmering liquids.

An open fire is best managed with moderate, controlled heat. Temperature can be adjusted through the hanging height and the arrangement of the coals. Sudden temperature changes should be avoided: cold water should not be poured into a very hot body, and a thoroughly chilled vessel should be warmed gradually. The metal remains hot after leaving the fire, so the cauldron needs a stable, non-combustible resting surface.

Surface care

Before first use, the interior should be cleaned, dried completely, and treated with a thin layer of edible oil. After cooking, remove food residue without leaving the vessel to soak for an extended period. Dry it promptly and thoroughly after washing, paying attention to the rim and the area where the lid meets the body, as moisture may remain in these places.

Both the inner and outer surfaces should be dry before storage. A light film of oil can be applied when needed. The lid should not be sealed tightly over a damp interior; allowing air to circulate helps preserve the prepared surface until the cauldron is used again.
