Cast-Iron Tatar Kazan 8 L Without Lid
Description
This 8 L cast-iron Tatar kazan is intended for cooking over an open fire. Its deep rounded bowl suits pilaf, stewed meat and vegetables, thick soups, and porridge. The format works well at a picnic, in a garden cooking area, or beside a properly prepared campfire.
A shape for open-fire cooking
The hemispherical base and rounded walls distinguish a Tatar kazan from a conventional saucepan. Heat surrounds the bowl, allowing ingredients to be browned first and then moved into a gentler stage of stewing or slow simmering. Cast iron warms progressively, stores heat, and continues releasing it after the flame is reduced. This is useful for dishes with clearly separated cooking stages.
The 8 L capacity leaves room for stirring and adding ingredients as the recipe develops. The bowl should not be filled to the rim, because boiling and mixing require free space. Serving yield varies with the recipe, the proportion of liquid, and the density of the ingredients.
Construction and specifications
- Type: Tatar kazan with a hemispherical base.
- Material: cast iron.
- Capacity: 8 L.
- Wall thickness: 3.8 mm.
- Weight: 4.7 kg.
- Configuration: without a lid.
- Suspension: fitted with a bail handle.
Positioning the kazan and managing heat
The rounded base is not intended for an unadapted flat surface. Over a fire, the kazan needs a stable support or a suitable tripod suspension. The setup must carry the bowl together with its ingredients and liquid. Securely position the empty kazan before filling it, and avoid moving the bowl unnecessarily while it is hot and full.
Control the heat through the amount of fuel, the condition of the embers, and the distance from the heat source. Use more active heat for browning, then reduce it for stewing. Heated cast iron should not be exposed to abrupt temperature changes: cold water on a hot surface may cause thermal shock. Let the bowl cool naturally.
Seasoning, cleaning, and storage
Before the first cooking session, wash the kazan, dry it completely, heat it, and apply a thin layer of food-grade vegetable oil. After use, let the bowl cool, remove food residue, and clean it with warm water and a soft sponge. Wipe and dry every surface thoroughly, because prolonged contact between cast iron and moisture may lead to corrosion. A very thin layer of vegetable oil can be applied to the clean, dry interior. Store the kazan in a dry, ventilated place.
