Description
This 45 cm cast-iron saj pan is made for cooking over an open fire. Its broad, round surface and convex base can be used for meat, fish, seafood, vegetables, and side dishes. The model weighs 5.5 kg: the substantial cast-iron bowl heats gradually, spreads heat across the cooking area, and continues to retain it after the fire has been reduced.
Two positions for different dishes
In its primary position, the saj works as a large pan for frying and stewing. The 45 cm diameter provides room to spread ingredients across the surface, move them between hotter and cooler areas, and cook several parts of one dish. Cast iron needs time to preheat before food is added. Vegetable oil or another cooking fat should be used during frying rather than heating food on a dry surface.
The pan can also be turned over with its convex side facing upward. The heated outer surface is then suitable for lavash and other thin flatbreads. A metal stand with a fire bowl is included, and its legs are 45 cm long. Two side handles provide defined grip points when positioning or carrying the cooled pan. Once heated, the saj should be handled only with suitable hand protection.

Preparing and caring for the cast iron
Before first use, rinse the cooking surface with warm water, dry it completely, heat it, and apply a small amount of vegetable oil. Do not leave the empty, dry pan over an intense flame for an extended period. For cooking, first place the saj securely, allow it to preheat, add oil or fat, and then arrange the ingredients across the surface.
Let the cast iron cool naturally after cooking. Do not pour cold water onto the hot surface, because an abrupt temperature change is unsuitable for heavy cookware. Once cool, clean the pan with warm water, wipe it thoroughly, and apply a thin film of oil. Keeping it dry and free from residual moisture between uses helps maintain the cooking surface and reduces the likelihood of rust.
Setting up beside an open fire
Place the stand on firm, level ground where it will not rock or sink into the soil. Check the empty pan’s position before lighting the fire, and leave adequate working space around it for cooking utensils. Do not reposition the assembly while it is hot.
